RV Recipes-On The Go Dining
Clean eating is great, but not everyone’s on a diet here! Or if you are, maybe you’re looking for a couple good splurge recipes to treat yourself. From tasty appetizers to a scrumptious dessert, these are sure to get you rethinking your meal plan for the week. Whatever your diet situation, try these down and dirty recipes out the next time you’re lookin’ to take a walk on your bad side. Don’t worry. There’s no judging here, and we promise not to tell doc.
Ingredients:
- 2 pounds small potatoes, about 1½ inches in diameter
- 2 tablespoons extra virgin olive oil
- ⅓ cup pitted kalamata olives
Directions:
Preheat oven to 400°. Spread potatoes on a large baking sheet and drizzle with oil. Toss to coat. Bake for 45 minutes oruntil the potatoes are crisp and tender. Puree the olives. Scrape over the cooked potatoes and toss well. Transfer to a serving bowl and serve warm or at room temperature.
Ingredients:
- ½ pound ground pork
- ½ pound chuck
- 1 cup onions, chopped
- ½ cup green bell pepper, chopped
- ½ cup celery, chopped
- 1 tablespoon garlic, chopped
- ½ cup gumbo base
- 1½ teaspoons cajun seasoning
- ½ teaspoon salt
- 3 cups beef stock
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- ½ teaspoon dried thyme (or ½ tablespoon fresh thyme)
- ½ teaspoon hot sauce
- ½ teaspoon black pepper
- ⅛ cup parsley, chopped
- ¼ cup green onion, chopped
- 7 cups cooked rice, packed
Directions:
Heat large pot over medium heat. Add pork and beef, and cook until browned. Add ½ cup onion, ¼ cup bell pepper, ¼ cup celery and garlic, and sauté for 2 minutes. Add gumbo base and cook for an additional five minutes. Add cajun seasoning, salt, beef stock, Worcestershire sauce, bay leaf, thyme, hot sauce and pepper. Bring mixture to a boil, lower the heat and simmer for another 30 minutes. Add remaining onion, celery and bell pepper. Cover the pot and simmer for an additional 30 minutes. Stir in green onions and parsley, then add cooked rice until completely incorporated.
Ingredients:
- ¼ cup mayonnaise
- 2 tablespoons Dijon mustard
- ½ teaspoon whipped butter
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- Pinch of cayenne pepper
- Pinch of teaspoon Italian seasoning
- ¼ teaspoon mustard powder
- Salt and freshly ground black pepper
- 1 slice Havarti cheese
- 1 slice Provolone cheese
- ¼ pound chicken, sliced or shredded
- 1 tablespoon honey mustard
- 1 tablespoon honey
- ¼ cup iceberg lettuce, shredded
- 3 slices tomato
- 5 slices pickle
Directions:
Preheat oven to 375°. Whisk together mayonnaise, dijon mustard, whipped butter and seasonings until well combined. Season with salt and pepper, to taste. Spread an even layer of sauce inside the top and bottom of bread. Layer both cheeses on bottom slice of bread. Place chicken on a baking sheet and drizzle with honey mustard. Place both pieces of bread and chicken in the oven and toast for three minutes or until cheese is completely melted. Spread another layer of sauce on top of the previous layer on bread and flip chicken onto the bread with melted cheese. Evenly spread lettuce, tomatoes and pickles, and replace top of bread.
Ingredients:
- 1 package (about 15 ounces) Oreo cookies
- 2 packages (3.9 ounces) instant chocolate pudding mix
- 4 cups milk
- 8 ounces cream cheese, softened
- ¼ cup butter, softened
- 1 cup powdered sugar
- 8 ounces whipped topping
- gummy worms candy (optional)
Directions:
Crush Oreos into crumbs and set aside. In a large bowl, whisk both boxes of instant pudding with milk for about two minutes. Let it rest for five minutes. Beat together cream cheese and butter until light and fluffy. This should take about three minutes. Add the powdered sugar to the cream cheese mixture until fluffy. Fold the cream cheese mixture into the chocolate pudding and then fold in the whipped topping until completely combined. Alternate layering the Oreos and pudding mixture in a serving dish, beginning and ending with Oreos. Refrigerate overnight before serving. Decorate with gummy worms for a fun flair!
